State bird and other dishes 154 USD w/ tax State bird provisions had been on my list to go to for quite a while. Overall, I was...whelmed. A very short dish by dish: State bird: 7/10. Fried chicken but instead it’s quail. Pretty tasty and exquisite, but could be more tender and less fried. Sour onions on the side went alright with the bird...they really like their sours at this restaurant. Steak tartare: 10/10. Lovely composition with tartare, crushed broccoli, lemongrass, and crispy sourdough. The flavor of lemon grass was not overt and perfect. Tofu: 8.5/10. I really enjoyed how a wide range of textures and flavors came together: celery, soft tofu, bean curd, fish, and peanuts. The spiciness was covert and felt Hunan style from the bean curd. However, a little too salty. Grilled octopus: 6/10. Quite acidic in flavor, but the pumpkin complimented well. The octopus was grilled too long so that it was no longer tender but more dry. Vietnamese fried pork belly: 8/10. Fish sauce with pork belly, mixed with mint and citrus. The pork was fried very well but the citrus didn’t have great synergy with it; rather, it detracted from a perfectly fried pork belly. Ham and cheese mustard pancake sandwich: 5/10. Unremarkable item with an extreme mustard flavor. Ribs: 6/10. Glazed or marinated in soy sauce, the ribs had not much flavor going on except from being a little too salty. Chicken dumpling: 5/10. A non-skillfully crafted dumpling paired with a salty and extremely flavored lemongrass soup. Lemon granita: 9/10. Super fresh zesty flavor. Goes well to balance out the thick and intense plum ricotta cheese cake mousse. This balance is in many ways: texture (ice vs soft mousse), flavor (zest vs rich cheese cake and plum), temperature (ice vs Normal temperature). Beer and honey cake: 7/10 good cake and cream, nothing super special. Batter was tasty and authentic. Swan oyster depot Selection of oysters, Sicilian sashimi, crab back, clam chowder and bread 100 USD w/ tax Super fresh oysters and clams at an SF institution. Be warned: the line is always long and we waited more than an hour on a Friday early afternoon. Is it worth? Well, it’s definitely some fresh, authentic seafood. Make sure to try out both the oysters and the clams. They taste like the sea and are well complemented with some light horseradish, while I found the cocktail sauce to cover the freshness. Also the Sicilian sashimi is a must get. It’s a Mediterranean version of sashimi and works out fantastically. The crab back is served cold, personally a little queasy to eat without really any flavor. Clam chowder is decent, but not noteworthy. Everything is prepared with detail, and it’s apparent that much thought has gone into every dish to showcase the essence JiangNan food. The DongPo pork is probably most thoroughly cooked piece of pork I’ve had. The fattiness does not present itself queasily and provides a unique texture. This is well paired with taro, which neutralizes the pork in both flavor and texture. The shrimp and scallop were grilled to a perfect Q texture, and the onsen egg was added balance into the set menu. Some of the dishes creatively cook western ingredients in a JiangNan style, which end up working very well. The mushrooms and prawn ball, although definitely unique, were otherwise unremarkable. The setting and service is fantastic and memorable; I was fortunately put in a private room where the waiters knocked and knelt down each time to set each dish. Eggs Benedict, French Toast, polux ice tea 275 RMB total This French bistro is one of the newest and hottest places in town. Only way we were able to get a seat was by coming on a weekday breakfast. Polux presents familiar classics executed in a perfect and seemingly simple manner. The French toast is 10/10, featuring a contrast in textures between the crunchy caramelized outer skin and a familiarly soft inner. The Eggs Benedict was also top notch using the most superb ingredients; look at that beautiful yolk color omg. Only complaint is that the bread is a little too stale and hard to bite. It looks awe worthy before biting in, but it soon becomes annoying to eat: you end up scooping out the filling to eat and ignoring the necessarily thick skin that contains the dumpling. 烤肉阶梯拼盘 (15-step meat platter) 598 RMB (~90 USD) Shanghai’s most popular 网红 restaurant lives up to the hype. Only time without a line is on a weekday lunch, or else you’ll have to reserve weeks ahead. The presentation of the dish is ingeniously fitting, sampling 15 different types of meats that are all delicately grilled by the server. My favorite was tied between the beef tongue for the tenderness or the uni wrap for the umami flavor explosion. The meat quality is amazing, but probably still does not justify the price tag. There are only 3 dishes on the menu, all crab, and it’s probably one of the first restaurants to start off Shanghai’s recent obsession with crab. The restaurant decor takes influence from its zen Buddhist founder, who somewhat ironically is vegetarian and does not eat anything on the menu. The golden crab noodles is made of 12 crabs’ roe: 6 male 6 female. It’s a bowl of luxury, presenting the richness of crab roe plain and simple without being too overwhelming. If you come by yourself, get this. There’s truly nothing quite like it out there. If you come with someone else, try out the crab leg noodle as well. At a fraction (1/5th) of the cost, it doesn’t come with the richness of the roe but presents a completely different aspect of the crab and is just as much a delicacy. The drunken crab, a whole raw crab marinated in yellow rice wine, is absolutely delicious but is probably not for everyone’s palette. Cejerdary does the rest very well too. Everything else is free: Evian water, fresh ginger tea, and really tasty unprocessed peanuts. Often with these crab dishes it is inevitable to get a little bit of shell mixed in, but not this place.
